Boulder-Famous Beet Hummus Recipe


Turn Up the Beet!

Our beet hummous recipe is sure to nourish the SHINE in your life – look at that color! A long-time favorite at Shine Restaurant.


Makes approximately 4 cups

INGREDIENTS:

  • 5 Medium Beets, scrubbed

  • 2 Tablespoons olive oil

  • 1/4 Cup water

  • 1/4 Cup Tahini Paste

  • 1/4 Cup Lemon Juice

  • 1-2 Small Garlic Cloves

  • 1 Teaspoon Sea Salt (or to taste)

PREPARATION:

  1. Preheat oven to 375ºF

  2. Place whole cleaned beets in a baking pan and drizzle with olive and pour water around the beets and cover with foil.

  3. Cook until the beets are easily pierced through with a fork, approximately 45 minutes

  4. When beets are pierced easily with a fork, remove from the oven.

  5. When cooled enough to handle, rub skins off with a cloth or paper towels. (if skins are not coming off easily, you can peel it with a knife!)

  6. Chop beets and put in a food processor

  7. Add tahini and lemon juice, garlic and salt and blend well.

  8. Chill then Serve

Keeps for Approximately 7-10 days in the refrigerator
