After working in the restaurant industry for more than 20 years, we wanted Shine to not only be a restaurant, but rather a community dedicated to nourishing food, drink and events. So when we opened the doors of Shine Restaurant & Gathering Place, we made a commitment to serve our customers nutritionally inspired comfort foods that were 100% gluten-free using ingredients close to the earth.
As someone who has been gluten free and paleo for a few years, I have struggled to find recipes that meet my criteria for flavor, and without a doubt the food in this book knocks it out of the park.
The 100-plus recipes featured in our book sparkle with this same dedication to high quality ingredients and bold flavors: 100% grass fed meats, free-range chicken, wild fish, lots of fresh, organic vegetables, natural fats, and nuts and seeds, while limiting grains, legumes, and dairy. These recipes, although gluten-free and paleo-friendly are so delicious that everyone will love them—they are healthy, yet still indulgent and satisfying.
